Juicy Baked Pork Chops

INGREDIENTS

  • 1 tablespoon paprika
  • 2 teaspoons EACH: onion powder and garlic powder
  • 1 teaspoon EACH: salt, pepper, and oregano
  • 2 tablespoons olive oil, divided
  • 4 – (1 ¼ inch thick) boneless pork chops

INSTRUCTIONS

  1. Turn your oven to 400 degrees Fahrenheit.
  2. In a small bowl, mix together the paprika, onion powder, garlic powder, salt, pepper, and oregano.
  3. Drizzle the 1 tablespoon of the olive oil over both sides of the pork chops. Sprinkle the spice mix evenly over both sides of the pork chops and place them in a baking dish. (see notes) Drizzle them with the remaining tablespoon of olive oil.
  4. Bake the pork chops for 18 minutes, or until they reach an internal temperature of 140 degrees Fahrenheit. Once you remove them from the oven, let them rest in the pan for 5 minutes before serving.

Aunt Julie’s Spinach Artichoke Dip

Ingredients:

½ c chopped sun dried tomatoes

1 14oz. Can artichoke hearts, chopped

1 10oz bag frozen spinach, thawed and squeezed dry

8 oz cream cheese, room temperature

8 oz sour cream

¼ c grated Parmesan cheese

4 oz Feta cheese, crumbled

½ c onion, chopped

1/3 c mayonnaise

1 T red wine vinegar

2 garlic cloves, grated

S&P to taste

Directions:

Place sun dried tomatoes into 1 c water in microwave for 3 min. Set aside

Mix cream cheese, sour cream, mayo, onion, Feta Cheese, S&P together in bowl

Add the Parmesan cheese, artichokes, garlic and vinegar into bowl and mix together

Add in spinach and mix together

Add in tomatoes (drained) with the above mixture

Place in deep dish and bake in microwave on high for 12 minutes or in 350 degree oven 20 min

Serve with veggies or tortilla chips
