Pork Tenderloin

Ingredients

  • ▢ 1 or 2 ½ pound pork tenderloins – (see note)
  • ▢ 1 tablespoon oil
  • ▢ 2-3 tablespoons fresh lemon, lime, or orange juice – (or 1 tablespoon of each)
  • ▢ 2 teaspoons Italian seasoning
  • ▢ 1 teaspoons garlic powder
  • ▢ 1 teaspoon cumin
  • ▢ 1 teaspoon salt
  • ▢ 1 teaspoon chili powder
  • ▢ ½ teaspoon smoked paprika – (optional but highly recommended)
  • ▢ ¼ teaspoon black pepper

Instructions

  • Preheat oven to 400 degrees and lightly grease a large baking/casserole dish. Pierce tenderloins all over with a fork. Rub oil onto all sides of the meat.
  • Whisk together Italian seasoning, garlic powder, cumin, salt, chili powder, smoked paprika (if using) and black pepper. Sprinkle mixture over tenderloin(s), patting it onto the surface of the meat on all sides. Place in prepared baking dish and drizzle lemon/lime juice over the top.
  • Bake for 25-35 minutes until outside is browned and crispy and centers are cooked through to desired doneness (you can take them out on the early side if you like the centers a little pink).
  • Spoon juices from the dish over the meat. Allow to rest on a cutting board or in the baking dish for 5-10 minutes. Slice into 1 inch pieces. Spoon any remaining juices from the pan over the slices, garnish with fresh chopped cilantro if desired, and serve.

Notes

This recipe is pretty flexible and you can use 1-2 very small pork tenderloins, or one medium-large pork tenderloin OR you can double or even triple the ingredients for the seasonings and serve a LOT of people with very large tenderloins.

Roasted Pork Tenderloin

Ingredients

  • 2 tsp sea salt, or to taste
  • 1tsp black pepper, freshly ground
  • 2 tsp Italian Seasoning
  • 2 tsp garlic powder
  • 2 tsp ground coriander
  • 2 Tbsp olive oil (extra light), or vegetable oil, or avocado oil*
  • 1 1/2 lb Pork Tenderloin

Instructions

  1. How to make Roasted Pork Tenderloin: Preheat oven to 400˚F with the rack in the middle.
  2. Trim tenderloin of fat and any silver skin and pat dry with a paper towel. Pierce pork loin all over with a fork and rub with 1 Tbsp oil.
  3. Combine your seasonings and sprinkle onto the tenderloin then use your hands to rub the spices into the tenderloin until evenly coated.
  4. Heat 1 Tbsp oil over med-high heat in a large oven-safe pan (cast iron or a dutch oven will work). Once oil is hot, add pork and brown on all sides (6 minutes total).
  5. Place in the oven and bake uncovered at 400˚F for 13-15 min, flipping the tenderloin over halfway through baking. Bake until center of pork registers at least 150˚F then transfer to a cutting board and let meat rest 5-10 min. Slice into rings and serve.

*Oil used should have a high smoke point. 

**Pork tenderloin is very juicy and does not need a sauce, but it is also really good served with A1 or BBQ sauce.

Air Fryer Pork Chops

INGREDIENTS

  • 2 center-cut, bone-in pork chops, 1 ½ – 2 inches thick (DuRock chops from Fareway)
  • 2 tablespoons brown sugar
  • 1 tablespoon paprika
  • 1 ½ teaspoons salt
  • 1 ½ teaspoons fresh ground black pepper
  • 1 teaspoon ground mustard
  • ½ teaspoon onion powder
  • ¼ teaspoon garlic powder
  • 1–2 tablespoons olive oil

INSTRUCTIONS

  1. Preheat air fryer to 400 degrees for 5 minutes
  2. Rinse pork chops with cool water and pat dry completely with a paper towel.
  3. In a small bowl, mix together all the dry ingredients.
  4. Coat the pork chops with olive oil and rub in the mix. Rub it in well and liberally. Use almost all of the rub mix for the 2 pork chops.
  5. Cook pork chops in air fryer at 400 degrees for 12 minutes, flipping pork chops over after 6 minutes.
